Set within the luxury surrounds of Wineglass Bay Estate, WADE is a new restaurant shaped by fire, family and Tasmania’s finest produce. Opening September 2026, WADE will deliver a generous, seasonal dining experience overlooking the vast waterways of Moulting Lagoon—pairing bold, wood‑fired flavours with one of the East Coast’s most spectacular waterfront settings.

WADE is led by chef-owner, Wade Fordham, whose philosophy is grounded in seasonality, simplicity and respect for exceptional ingredients. Fire sits at the centre of his kitchen. The Argentine Asado grill—the heartbeat of the restaurant—brings depth, smoke and texture to every dish, celebrating Tasmania’s world‑class produce with patience, restraint and instinctive cooking.
Menus are shaped by local farmers, fishermen, growers and artisans. Dishes are designed to be shared, encouraging connection, conversation and the simple pleasure of enjoying great food with the people around you.

Nestled on Tasmania’s East Coast, Wineglass Bay Estate offers boutique luxury retreats across 52 acres of native bushland. The estate is designed for slow living—uninterrupted waterfront views, soaring gable ceilings, natural textures and quiet luxury. WADE and the future cellar door sit separately from the accommodation precinct, ensuring the retreat experience remains peaceful and private.
The Role
We are building a small, skilled and passionate kitchen team to help bring WADE’s fire‑driven, produce‑led dining experience to life. As part of the opening team, you will work closely with Wade to deliver menus that honour Tasmania’s remarkable ingredients and the craft of Asado cooking.
You’ll Bring
- Demonstrated experience in quality restaurants, fine‑casual or premium dining
- Strong understanding of Asado grilling, wood‑fire cooking and heat management
- A genuine love of Tasmania’s finest produce and seasonal menu development
- High standards in flavour, presentation and kitchen organisation
- A calm, respectful and collaborative approach to service
- Pride in your craft and a desire to contribute to a meaningful, place‑driven dining experience
